Skillet Chicken Enchiladas

Ingredients

 

GARNISH

  • 1 jalapeño, sliced
  • 1 avocado, diced
  • 2 green onions, chopped
  • 2 tablespoons chopped cilantro

Directions

  1. In large bowl, combine chicken, corn, beans, LA VICTORIA® Diced Green Chiles, 1 1/2 cups cheese, and 1/2 cup LA VICTORIA® Red Enchilada Sauce.
  2. Add thin layer of LA VICTORIA® Red Enchilada Sauce to coat bottom of skillet.
  3. Layer tortilla chips, then drizzle about 1/2 cup LA VICTORIA® Red Enchilada Sauce over. Add 1 cup chicken mixture. Repeat these layers 2 more times.
  4. Add any leftover LA VICTORIA® Red Enchilada Sauce, then top with remaining 1 cup cheese.
  5. Cover with foil and bake at 350° for 30 minutes.
  6. Garnish with jalapeños, avocado, green onions and cilantro.

 

NOTE

  • Use a thicker tortilla chip, if too thin they will become overly soggy.
  • Be sure to coat tortilla chips as best as possible when layering LA VICTORIA® Red Enchilada Sauce over top.
