Skillet Chicken Enchiladas

Ingredients
- 2 cups shredded chicken
- 15-ounces corn, drained
- 15-ounces black beans, rinsed and drained
- 7-ounces LA VICTORIA® Diced Green Chiles
- 2 1/2 cups shredded cheddar cheese
- 28-ounces LA VICTORIA® Red Enchilada Sauce, separated
- 1 bag tortilla chips
GARNISH
- 1 jalapeño, sliced
- 1 avocado, diced
- 2 green onions, chopped
- 2 tablespoons chopped cilantro
Directions
- In large bowl, combine chicken, corn, beans, LA VICTORIA® Diced Green Chiles, 1 1/2 cups cheese, and 1/2 cup LA VICTORIA® Red Enchilada Sauce.
- Add thin layer of LA VICTORIA® Red Enchilada Sauce to coat bottom of skillet.
- Layer tortilla chips, then drizzle about 1/2 cup LA VICTORIA® Red Enchilada Sauce over. Add 1 cup chicken mixture. Repeat these layers 2 more times.
- Add any leftover LA VICTORIA® Red Enchilada Sauce, then top with remaining 1 cup cheese.
- Cover with foil and bake at 350° for 30 minutes.
- Garnish with jalapeños, avocado, green onions and cilantro.
NOTE
- Use a thicker tortilla chip, if too thin they will become overly soggy.
- Be sure to coat tortilla chips as best as possible when layering LA VICTORIA® Red Enchilada Sauce over top.
