Papas con Chorizo Street Tacos
Papas fried with chorizo and made into street tacos, topped with creamy HERDEZ® Guacamole Salsa. Bold flavors take this comfort food to anther level.

Ingredients
- 1-pound pork chorizo
- 1/3 cup diced red onion
- 1 teaspoon minced garlic
- 1/3 cup oil
- 1 large russet potato, diced 1/2-inch cubes
- HERDEZ® Guacamole Salsa Medium
- 10 street taco style tortillas
- 1 cup shredded Mexican cheese
GARNISH
- Drizzle HERDEZ® Guacamole Salsa Medium
- 8-ounces WHOLLY® Diced Avocado
- Chopped cilantro
Directions
- In large pan, over medium-high heat, cook chorizo and onion 4 minutes.
- Add garlic, cook additional 1-2 minutes. Remove mixture from pan, set aside.
- Add oil to existing pan and heat over medium heat. Add potatoes and cook 8-10 minutes, stirring throughout. Drain oil and add chorizo mixture back to pan and combine. Set aside.
- Heat 1 tablespoon oil in large pan and add 3-4 tortillas. Add about 1 1/2 tablespoons cheese to each tortilla. Cook about 2 minutes, until cheese melts, add 1/4 cup of potato-chorizo mixture and 1 teaspoon HERDEZ® Guacamole Salsa to each tortilla.
- Carefully fold tortillas over and press together – cheese will help hold them closed. Remove from heat.
- Repeat this process until all 10 tacos are made.
- Top the tacos with drizzle of HERDEZ® Guacamole Salsa Medium, WHOLLY® Diced Avocado and cilantro.
