Mexican Frittata
We use our HERDEZ® Avocado Hot Sauce both in the frittata and on top for a rich Mexican flavor that will have you making this every weekend. A breakfast recipe with a kick!

Ingredients
- 1 tablespoon olive oil
- 5-ounces chorizo
- 1/2 cup halved cherry tomatoes
- 1/2 cup diced yellow onion
- 1 cup spinach
- 10 eggs
- 2 tablespoons heavy cream
- 2 tablespoons HERDEZ® Avocado Hot Sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon Mexican oregano
- 1/2 teaspoon garlic powder
- 1 cup shredded Pepper Jack cheese
GARNISH
- HERDEZ® Avocado Hot Sauce
- Jalapeños
- Crumbled cotija cheese
- Cilantro
Directions
- Grease medium/large cast iron skillet with olive oil.
- In medium pan cook chorizo over medium-high heat for 5 minutes. Add tomatoes, onion and spinach and cook another 3-4 minutes.
- In medium bowl, whisk eggs and cream together. Add remaining ingredients and whisk well.
- Add chorizo mixture to bottom of skillet and pour egg mixture over top.
- Bake at 375° for 20 minutes, or until egg mixture just stops jiggling.
- Top with HERDEZ® Avocado Hot Sauce, jalapeños, cotija cheese and cilantro.
