Jalapeño Popper Sloppy Joe Sliders

We took the classic sloppy joe and gave it the LA VICTORIA® flare! Our Jalapeño Popper Sloppy Joe Sliders are delicious and bite sized, making for a hardy appetizer or a fun dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1-pound ground beef
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 1/2 cups LA VICTORIA® Red Enchilada Sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup ketchup
  • 1/4 cup water
  • 1 tablespoon brown sugar
  • 7-ounces LA VICTORIA® Diced Green Chiles
  • 1/2-pound bacon, cooked and chopped
  • 2 jalapeños, seeded and sliced
  • 2 cups shredded cheddar cheese
  • 12-pack slider buns

 

BUTTER MIXTURE

  • 1/4 cup melted butter
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Directions

  1. Heat olive oil in medium saucepan, cook ground beef and onion over medium-high heat until browned. Remove excess grease. Add garlic and cook 1 minute.
  2. Stir in tomato paste, LA VICTORIA® Red Enchilada Sauce, Worcestershire, ketchup, water, brown sugar, and season with salt and pepper to taste. Simmer, stirring occasionally.
  3. While beef mixture simmers, make butter mixture. Combine ingredients in small bowl.
  4. Use a serrated knife to slice the rolls in half lengthwise, keeping the buns connected. Place the bottom half in a 9×13-inch baking dish.
  5. To beef mixture, add LA VICTORIA® Diced Green Chiles and bacon.
  6. Evenly spread beef mixture onto bottom half of rolls. Add jalapeño slices and top with cheddar cheese.
  7. Place other bun half on top. Brush tops of buns with butter mixture.
  8. Place in oven and bake for 15-18 minutes or until the top buns are slightly crisp and the cheese is fully melted.
