Chorizo Egg Bites

Ingredients
- 8 eggs
- 1/4 cup milk
- 1/4 cup CHI-CHI’S® Thick & Chunky Salsa Medium
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 9-ounces chorizo, cooked
- 3-ounces Pepper Jack cheese, shredded
- 3 green onions, chopped
GARNISH
- Chopped green onion
- CHI-CHI’S® Thick & Chunky Salsa Medium
Directions
- In medium bowl, whisk together eggs, milk, CHI-CHI’S® Thick & Chunky Salsa Medium and seasonings.
- In well-greased cupcake pan, add equal parts egg mixture to each cavity. Then top with equal parts chorizo, cheese and green onions.
- Bake at 350° for 15-20 minutes, or until the egg is set in the center.
- Top with CHI-CHI’S® Thick & Chunky Salsa Medium and green onions.
