Chorizo Egg Bites

Morning breakfast made easy with this delicious egg bite recipe. Make ahead and warm up as needed!

Ingredients

  • 8 eggs
  • 1/4 cup milk
  • 1/4 cup CHI-CHI’S® Thick & Chunky Salsa Medium
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 9-ounces chorizo, cooked
  • 3-ounces Pepper Jack cheese, shredded
  • 3 green onions, chopped

GARNISH

Directions

  1. In medium bowl, whisk together eggs, milk, CHI-CHI’S® Thick & Chunky Salsa Medium and seasonings.
  2. In well-greased cupcake pan, add equal parts egg mixture to each cavity. Then top with equal parts chorizo, cheese and green onions.
  3. Bake at 350° for 15-20 minutes, or until the egg is set in the center.
  4. Top with CHI-CHI’S® Thick & Chunky Salsa Medium and green onions.
